Years ago our family went to Dallas for Thanksgiving. We drove for two days to get there and we drove for two more days to get back. Yeah, it's a long way to drive to Dallas. Anyway, we went to spend the holiday with our great friends David and Julie and their family and we really enjoyed our time with them. David was Rick's missionary companion and I've mentioned him in previous posts. We had a wonderful Thanksgiving meal with them and they served this recipe for sweet potato casserole. Wow! We've made it ever since and we've taken it to many family gatherings. It's always been a hit. Once you make it, you'll never go back to your former recipe. I promise. And it's just in time for your Thanksgiving menu planning.
Julie's Sweet Potato Casserole
2 eggs
1 c. sugar
6 T. butter
1 t. vanilla
1/2 c. cream
3 c. cooked and mashed sweet potatoes
Mix ingredients with mashed sweet potatoes and spread in a casserole dish. Top with this mixture:
1 c. brown sugar
2 T. butter
1 c. chopped pecans
1/3 c. flour
Bake at 350 degrees for 45 minutes. I routinely double (or triple) this recipe. Since it's made with butter, cream, sugar and pecans, it's sure to please. Enjoy!

I have almost the same recipe. I was going to post it this week. Too funny!
It was a big hit on Sunday! Everyone loved it and it was super easy to make. Thanks!
A great dish - and it makes sweet potatoes much more than just merely palatable.
These are definitely one of my Thanksgiving favorites.
